Ingredients
  

For the Chicken
  • 1 kg chicken pieces Use your preferred cuts.
  • 250-300 ml buttermilk For marinating.
For the Coating
  • 200-220 g all-purpose flour Adjust based on recipe variations.
  • 1-2 tbsp cornstarch Optional for extra crispiness.
  • 1 tsp garlic powder
  • 1 tsp onion powder For one recipe.
  • 1 tsp paprika For one recipe.
  • 1 tsp cayenne pepper For one recipe.
  • 1 tsp chili powder For one recipe.
  • to taste Salt
  • to taste Black pepper
For Frying
  • Oil for frying Use oil with high smoke point.
For Garlic Parmesan Finish
  • 60 g butter Melted.
  • 4 cloves garlic Minced.
  • 40 g grated parmesan
  • 200 ml milk Used in the garlic parmesan finish.
  • 1 tbsp parsley Chopped.

Method
 

Preparation
  1. Marinate the chicken pieces in buttermilk with added spices for at least 2 hours.
  2. Prepare the seasoned flour mixture with the ingredients according to the recipe variations.
Frying
  1. Coat the marinated chicken pieces in the flour mixture.
  2. Heat oil in a frying pan to 170-180°C (340-355°F).
  3. Fry the chicken until golden brown and crispy for approximately 12-15 minutes.
Garlic Parmesan Finish
  1. Melt butter and cook minced garlic.
  2. Add parmesan and parsley, then toss over the fried chicken before serving.

Notes

Make sure the oil is hot enough before frying to ensure a crispy texture. Do not overcrowd the pan while frying to maintain oil temperature. Let the chicken rest on a wire rack after frying to keep it crispy.
