Salad Base
  • 4 cups Mixed greens (e.g., spinach, arugula, romaine) Choose a variety for different flavors and textures.
  • 1 cup Cherry tomatoes, halved Adds sweetness and color.
  • 1 medium Cucumber, sliced For a refreshing crunch.
  • 1/2 medium Red onion, thinly sliced Adjust amount to taste.
  • 1 medium Avocado, diced Use ripe avocados for the best flavor.
  • 1/2 cup Feta cheese, crumbled Optional, can be substituted or omitted.
Dressing
  • 1/4 cup Olive oil Adjust to taste.
  • 2 tablespoons Lemon juice Freshly squeezed is best.

Method
 

Preparation
  1. In a large bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, avocado, and feta cheese.
  2. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  3. Drizzle the dressing over the salad and toss gently to combine.
  4. Serve immediately and enjoy!

Notes

Store leftover salad without the dressing in an airtight container for up to 2 days. Add fresh dressing just before serving if desired. For a filling variation, consider adding quinoa, chickpeas, or grilled chicken.
