  • 6 slices thick Texas toast or brioche Using thick bread helps hold its shape.
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 2 tablespoons granulated sugar
  • 2 tablespoons butter For cooking.
  • 1/2 cup maple syrup For serving.

Preparation
  1. Cut the bread slices into evenly sized cubes about one inch wide.
  2. In a shallow bowl, whisk together the eggs, milk, vanilla extract, ground cinnamon, and granulated sugar until smooth.
  3. Add the bread cubes to the bowl and toss gently to coat them in the mixture.
  4. Heat a large skillet over medium heat and melt the butter until it begins to sizzle.
  5. Place the coated bread cubes in the skillet in a single layer and cook, turning occasionally, until golden brown and slightly crispy.
  6. Once browned, remove the bites from the pan and place on a serving plate.
  7. Drizzle maple syrup over the warm bites and serve immediately.

Notes

Using slightly stale or day-old bread works best. Cooking the bites in a single layer helps them brown evenly. Keep finished bites warm in the oven if cooking in batches.
