French Onion Soup

  • 6 large yellow onions, thinly sliced
  • 4 tbsp unsalted butter
  • 1 tbsp olive oil
  • 8 cups beef broth Can be substituted with vegetable broth for a vegetarian version.
  • 1 cup dry white wine
  • 2 tbsp flour
  • to taste Salt and pepper
  • Baguette slices For serving.
  • 1 1/2 cups shredded Gruyère cheese Can substitute with Swiss or mozzarella cheese.

Method
 

Preparation
  1. In a large pot, melt the butter and olive oil over medium heat.
  2. Add the onions and cook, stirring frequently, until they are caramelized, about 30-40 minutes.
  3. Sprinkle the flour over the caramelized onions and mix well. Cook for another 2 minutes.
  4. Slowly add the beef broth and white wine, stirring to combine. Bring to a simmer, seasoning with salt and pepper to taste.
  5. Let the soup simmer for at least 20 minutes.
  6. Preheat the oven broiler.
  7. Ladle the soup into oven-safe bowls, place a slice of baguette on top of each, and sprinkle the Gruyère cheese over the bread.
  8. Place the bowls under the broiler until the cheese is melted and bubbly, about 2-3 minutes.

Notes

Take your time caramelizing the onions for incredible depth of flavor. Use a good quality beef broth and experiment with different cheeses. Can be made vegetarian by following provided tips.
