- In a large pot, melt the butter and olive oil over medium heat.
- Add the onions and cook, stirring frequently, until they are caramelized, about 30-40 minutes.
- Sprinkle the flour over the caramelized onions and mix well. Cook for another 2 minutes.
- Slowly add the beef broth and white wine, stirring to combine. Bring to a simmer, seasoning with salt and pepper to taste.
- Let the soup simmer for at least 20 minutes.
- Preheat the oven broiler.
- Ladle the soup into oven-safe bowls, place a slice of baguette on top of each, and sprinkle the Gruyère cheese over the bread.
- Place the bowls under the broiler until the cheese is melted and bubbly, about 2-3 minutes.
Notes
Take your time caramelizing the onions for incredible depth of flavor. Use a good quality beef broth and experiment with different cheeses. Can be made vegetarian by following provided tips.
