French Onion Ground Beef and Rice Casserole

  • 1 pound lean ground beef
  • ½ to 1 teaspoon garlic salt or to taste
  • 2 cans beef consommé (10.5 oz / 295 ml each)
  • 2 cans French onion soup (10.5 oz / 295 ml each)
  • ¾ cup water
  • 2 cups uncooked long grain white rice
  • ¾ cup butter, sliced (about 1½ sticks)
Optional Topping
  • 1 to 1½ cups grated cheddar or mozzarella cheese for topping

Preparation
  1. Preheat the oven to 425°F (220°C). Lightly grease a 9x13 inch (23x33 cm) baking dish with non-stick cooking spray or butter.
  2. In a large skillet over medium heat, cook the ground beef with the garlic salt. Stir frequently, breaking it into small crumbles until browned and cooked through.
Layering and Baking
  1. Evenly distribute the uncooked rice across the bottom of the prepared baking dish, then spread the cooked ground beef over the rice without mixing.
  2. Pour the beef consommé, French onion soup, and water over the rice and beef. Stir gently to distribute the liquid.
  3. Place the sliced butter evenly over the top.
  4. Cover with aluminum foil and bake for 30 minutes.
  5. After 30 minutes, remove the foil and continue baking uncovered for another 30 minutes, or until the rice is tender and the top is golden.
  6. Optional: If using cheese, sprinkle over the top during the last 10 minutes of baking.
  7. Let the casserole rest for 5–10 minutes before serving. Fluff gently with a fork and serve warm.

Notes

For a spicier version, add red pepper flakes or diced jalapeños. You can also use ground turkey or chicken for a lighter dish. Adding peas, mushrooms, or sautéed bell peppers is a great way to incorporate vegetables. This casserole can be prepared ahead of time; just refrigerate and add extra baking time if baking from cold.
