  • 2 cups cooked shredded chicken Use rotisserie chicken for convenience.
  • 3/4 cup cottage cheese Feel free to add more for creaminess.
  • 1/2 cup shredded mozzarella
  • 1/3 cup grated Parmesan
  • 1 teaspoon paprika Adjust spice level to taste.
  • 1/2 teaspoon black pepper
  • 6 pieces tortillas Use gluten-free tortillas for a gluten-free option.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix the cooked shredded chicken, cottage cheese, mozzarella, Parmesan, paprika, and black pepper.
Assembly and Baking
  1. In a baking dish, layer two tortillas, then spread a portion of the chicken mixture over them.
  2. Repeat layering with the remaining tortillas and chicken mixture. Finish with a layer of cheese on top.
  3. Bake in the preheated oven for 25-30 minutes until the top is golden and bubbly.
  4. Allow to cool for a few minutes before slicing and serving.

Notes

Serve warm with a fresh green salad or garlic bread. Leftovers can be stored in an airtight container in the fridge for 3-4 days or frozen for up to 2 months.
