Preparation
- Preheat oven to 375°F.
- In a large skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.
Seasoning
- Add taco seasoning and water to the beef. Let it simmer for 2–3 minutes until the mixture thickens.
- Stir in the refried beans until everything is well combined and heated through.
Assembly
- Lay tortillas flat and spoon the beef-bean mixture down the center of each one.
- Roll tightly like a burrito and place seam-side down in a lightly greased baking dish.
Baking
- Pour the enchilada sauce evenly over the rolled tortillas.
- Sprinkle generously with cheddar and Monterey Jack cheeses.
- Bake uncovered for 20–25 minutes until the cheese is melted and everything is hot and bubbly.
Serving
- Serve warm with extra enchilada sauce spooned over the top. Add chopped onions, olives, or a dollop of sour cream if you like!
