Ingredients

  • 1 lb ground beef
  • 1 can (16 oz) refried beans
  • 1 packet taco seasoning
  • 1/4 cup water
  • 6 large flour tortillas
  • 1 can (10 oz) red enchilada sauce
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese

Method
 

Preparation
  1. Preheat oven to 375°F.
  2. In a large skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.
Seasoning
  1. Add taco seasoning and water to the beef. Let it simmer for 2–3 minutes until the mixture thickens.
  2. Stir in the refried beans until everything is well combined and heated through.
Assembly
  1. Lay tortillas flat and spoon the beef-bean mixture down the center of each one.
  2. Roll tightly like a burrito and place seam-side down in a lightly greased baking dish.
Baking
  1. Pour the enchilada sauce evenly over the rolled tortillas.
  2. Sprinkle generously with cheddar and Monterey Jack cheeses.
  3. Bake uncovered for 20–25 minutes until the cheese is melted and everything is hot and bubbly.
Serving
  1. Serve warm with extra enchilada sauce spooned over the top. Add chopped onions, olives, or a dollop of sour cream if you like!
