- In a skillet, melt butter over medium heat.
- Crack eggs into the skillet and season with salt and pepper.
- Cook until the whites are set, then flip to cook the other side if desired.
- Toast the bread while the eggs are cooking.
- Assemble the sandwich by placing the cooked eggs on one slice of bread, adding any optional toppings, and covering with the second slice.
- Cut in half and serve warm.
Notes
Serve the sandwich warm paired with a side of fruit, salad, or a cup of soup for a complete meal. If you have leftovers, store them in an airtight container in the refrigerator for 1-2 days and reheat in the microwave for about 30 seconds. Can be made ahead of time by preparing the eggs and toasting the bread in advance.
