Ingredients
  

For the pie
  • 1 packet instant vanilla pudding mix
  • 1 cup cold milk
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • 8 oz Cool Whip, thawed 1 tub
  • 2 cups fresh strawberries, sliced
  • 1 crust graham cracker crust store-bought or homemade

Preparation
  1. In a medium mixing bowl, whisk together the vanilla pudding mix and cold milk. Continue whisking until the mixture begins to thicken slightly, which should take about 2 minutes.
  2. Stir in the powdered sugar and vanilla extract until well combined.
  3. Using a spatula, gently fold the Cool Whip into the pudding mixture, being careful not to stir aggressively to keep the filling light and fluffy.
  4. Arrange a layer of sliced strawberries along the bottom of your graham cracker crust to add a burst of fresh flavor.
  5. Spoon the Cool Whip filling into the crust over the strawberries and spread it evenly.
  6. Top with additional sliced strawberries for decoration.
  7. Place the pie in the refrigerator for at least 4 hours, or overnight for best results, to allow the filling to firm up.
  8. Once fully chilled, slice and enjoy. Keep the pie refrigerated at all times, do not freeze.
