Preparation
- Whip the heavy cream in a bowl until it forms soft peaks.
- In another bowl, mix the softened cream cheese, powdered sugar, and vanilla until smooth.
- Gently fold the whipped cream into the cream cheese mixture until well combined.
- In a separate bowl, mix the graham cracker crumbs with melted butter until crumbly.
- Press half of the graham cracker mixture into the bottom of a dish.
- Spread the cream cheese mixture over the graham cracker layer.
- Top with the remaining graham cracker mixture.
- Chill in the refrigerator for at least 4 hours or until set.
Serving
- Cut into squares or spoon out portions into individual bowls.
- Add a sprinkle of chocolate chips or fresh fruit on top if desired.
Notes
Store leftovers in an airtight container in the refrigerator for up to 4 days. Can be prepared up to a week ahead and frozen; thaw in the fridge overnight before serving. Experiment with different cookies for the crust or toppings like caramel sauce or nuts.
