Ingredients
  

Base
  • 1 cup heavy cream Whipped to form soft peaks
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 8 ounces cream cheese, softened Ensure cream cheese is softened for easier mixing.
Crust
  • 1 cup graham cracker crumbs Can use flavored graham crackers for a twist.
  • 1/4 cup melted butter Mix with graham cracker crumbs until crumbly.
Toppings
  • Chocolate chips or fruit for topping (optional) Add for extra flair when serving.

Method
 

Preparation
  1. Whip the heavy cream in a bowl until it forms soft peaks.
  2. In another bowl, mix the softened cream cheese, powdered sugar, and vanilla until smooth.
  3. Gently fold the whipped cream into the cream cheese mixture until well combined.
  4. In a separate bowl, mix the graham cracker crumbs with melted butter until crumbly.
  5. Press half of the graham cracker mixture into the bottom of a dish.
  6. Spread the cream cheese mixture over the graham cracker layer.
  7. Top with the remaining graham cracker mixture.
  8. Chill in the refrigerator for at least 4 hours or until set.
Serving
  1. Cut into squares or spoon out portions into individual bowls.
  2. Add a sprinkle of chocolate chips or fresh fruit on top if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days. Can be prepared up to a week ahead and frozen; thaw in the fridge overnight before serving. Experiment with different cookies for the crust or toppings like caramel sauce or nuts.
