Main Ingredients
  • 2 cups all-purpose flour
  • 1 cup packed brown sugar Make sure to pack tightly.
  • 1 cup granulated sugar
  • 1 cup butter, softened Should be softened but not melted.
  • 1 cup chocolate chips
  • 1 cup shredded coconut
  • 1 cup raisins
  • 1 cup chopped nuts Feel free to mix and match.
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the butter, brown sugar, and granulated sugar until smooth.
  3. Beat in the eggs and vanilla extract until fluffy.
  4. In another bowl, combine the flour, baking soda, and salt. Gradually add this to the creamed mixture.
  5. Stir in the chocolate chips, coconut, raisins, and nuts.
Baking
  1. Drop by rounded tablespoonfuls onto ungreased baking sheets.
  2. Bake for 10 to 12 minutes or until golden brown.
  3. Allow cookies to cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.

Notes

These cookies are best served warm and can be paired with milk or coffee. To keep fresh, store in an airtight container at room temperature for up to one week, or freeze for up to three months.
