For the Cookie Base
  • 16 oz refrigerated sugar cookie dough
For the Cream Cheese Frosting
  • 8 oz cream cheese Softened
  • 4 tablespoons unsalted butter Softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon salt
For the Fruit Topping
  • 1 cup sliced strawberries
  • 1/2 cup blueberries
  • 1/2 cup peeled kiwi slices
  • 1/2 cup mandarin orange segments

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare a baking sheet by lining it with parchment paper or lightly greasing it.
  2. Roll out the refrigerated sugar cookie dough onto the baking sheet, shaping it into a large oval form.
Baking
  1. Bake the cookie until the edges are light golden brown, keeping the center soft and slightly chewy.
  2. Remove from oven and allow to cool completely on a flat surface.
Frosting Preparation
  1. In a mixing bowl, combine cream cheese, softened butter, powdered sugar, vanilla extract, and salt. Beat until smooth and creamy.
  2. Spread the frosting evenly across the cooled cookie crust.
Decorating
  1. Arrange the sliced strawberries, blueberries, kiwi, and mandarin oranges decoratively on top of the frosting.

Notes

For best results, ensure fruit is completely dry before decorating and chill the finished fruit pizza for easier slicing.
