  • 1 bag (26 oz) frozen shredded hash browns
  • 1 cup sour cream
  • 2 cups shredded cheese (Colby Jack)
  • 1.5 pounds ground beef
  • 2 packets taco seasoning
  • 1 can fiesta cheese soup
  • 1/2 stick butter melted
  • 1 can tomatoes with green chiles
  • 1/2 bag crunchy Doritos for topping
  • Optional: drained black beans

Method
 

Preparation
  1. Cook the ground beef in a skillet and add one packet of taco seasoning. Set it aside once done.
  2. In a large mixing bowl, combine the hash browns, sour cream, fiesta cheese soup, tomatoes with green chiles, shredded cheese, melted butter, and the second packet of taco seasoning. Stir in the cooked ground beef. Optionally, add drained black beans.
  3. Spread the mixture evenly into a 9x13 inch baking pan and top with crushed Doritos.
Baking
  1. Bake at 350 degrees Fahrenheit for 35 to 45 minutes, or until hot and bubbly.
Serving
  1. Serve hot, optionally topping with more sour cream.

Notes

For extra flavor, sauté some onions and bell peppers with the ground beef. Using fresh ingredients like homemade taco seasoning can enhance the taste. Adjust cheese quantity based on preference. Options include using cheddar or pepper jack cheese and making it vegetarian by omitting ground beef.
