Ingredients
  

Casserole Base
  • 26 oz frozen shredded hash browns Make sure to thaw before mixing.
  • 1 cup sour cream
  • 2 cups shredded cheese (Colby Jack) Can use different cheese types if desired.
  • 1.5 pounds ground beef Can substitute with ground turkey or chicken.
  • 2 packets taco seasoning
  • 1 can fiesta cheese soup
  • 0.5 stick butter Melted.
  • 1 can tomatoes with green chiles
  • 0.5 bag crushed Doritos For topping.

Method
 

Preparation
  1. Cook 1.5 pounds of ground beef in a skillet until browned. Add a packet of taco seasoning and set aside.
  2. In a large bowl, mix together the thawed shredded hash browns, sour cream, fiesta cheese soup, tomatoes with green chiles, shredded cheese, melted butter, and the second packet of taco seasoning along with the cooked ground beef.
  3. Spread the mixture evenly into a 9x13 inch pan.
  4. Top with the crushed Doritos.
Baking
  1. Bake in the oven at 350°F for 35-45 minutes, until bubbly and golden.
  2. Enjoy! Optional: Top with extra sour cream if desired.

Notes

To store leftovers, let cool completely, then transfer to an airtight container and refrigerate for 3-4 days or freeze for up to a month. Reheat in the oven or microwave when ready to eat. Customize by adding fresh toppings like diced tomatoes, lettuce, or jalapeños.
