  • 1/2 pound lean ground beef Can substitute with ground turkey or chicken for a lighter option.
  • 1/2 pound rotini pasta Can use any short pasta like penne or fusilli.
  • 2 tablespoons taco seasoning Follow package instructions.
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded cheddar cheese Can substitute with Monterey Jack cheese.
  • 1 cup lettuce, chopped Additional veggies like bell peppers or corn can be added.
  • 1/2 cup Doritos, crushed Add just before serving for best texture.
  • 1/2 cup sour cream
  • 1/4 cup salsa

Method
 

Preparation
  1. Cook the rotini pasta according to package instructions; drain and set aside.
  2. In a skillet, brown the ground beef over medium heat and drain any excess fat.
  3. Add taco seasoning and follow package instructions.
  4. In a large bowl, combine cooked pasta, seasoned beef, cherry tomatoes, cheddar cheese, and lettuce.
  5. In a separate bowl, mix together sour cream and salsa.
  6. Pour the dressing over the pasta salad and toss to combine.
  7. Top with crushed Doritos just before serving.

Notes

Store any leftover pasta salad in an airtight container in the refrigerator for 2 to 3 days. For best texture, add crushed Doritos fresh each time you serve it.
