  • 1/2 pound rotini pasta Any pasta shape can be substituted.
  • 2 tablespoons taco seasoning Adjust to taste for spice level.
  • 1 cup shredded lettuce Iceberg or romaine work well.
  • 1 cup diced tomatoes Use fresh tomatoes for best flavor.
  • 1/2 cup shredded cheese Cheddar or a Mexican blend is recommended.
  • 1 cup crushed Doritos Add just before serving for crunch.
  • 1/2 cup ranch dressing Can substitute with other creamy dressings.

Method
 

Preparation
  1. Cook the rotini pasta according to package instructions; drain and set aside.
  2. In a skillet, cook the ground beef over medium heat until fully cooked; drain excess fat.
  3. Stir in the taco seasoning and cook for an additional 2-3 minutes.
Mixing
  1. In a large bowl, combine the cooked pasta, seasoned beef, shredded lettuce, diced tomatoes, shredded cheese, and ranch dressing.
  2. Mix until well combined.
Serving
  1. Top with crushed Doritos just before serving. Serve cold or at room temperature.

Notes

Store leftovers in an airtight container in the refrigerator for best results within 2-3 days. Keep crushed Doritos separate until serving to maintain crunch.
