Preparation
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Add in eggs and vanilla extract (if desired) and mix well.
- Gradually add in flour, baking soda, and salt until combined.
- Fold in chocolate chips and M&M’s.
Baking
- Spread the cookie dough mixture into a greased baking dish and flatten it out evenly.
- Bake for 20-25 minutes or until the edges are golden brown.
- Let it cool completely before layering with ice cream.
Assembly
- Once cooled, layer scoopable ice cream of your choice over the cookie layer and freeze until set.
Serving
- To serve, take the cake out of the freezer and let it sit for a few minutes for easier slicing.
- Use a sharp knife to cut into squares or slices.
- You can serve it plain or with extra chocolate syrup, whipped cream, or even more M&M's on top for added fun!
Notes
Store any leftovers in an airtight container in the freezer for up to two weeks. Wrap it well with plastic wrap or foil to prevent freezer burn. Consider adding other mix-ins like peanut butter or nuts.
