Cucumber-Melon Smoothies

Ingredients
  

Smoothie Base
  • 2 cups reduced-fat plain Greek yogurt
  • 1/3 cup honey Adjust sweetness as desired
  • 3 cups chopped honeydew melon Use ripe melon for sweetness
  • 2 medium cucumbers, peeled, seeded, and chopped
  • 1 to 2 tablespoons fresh mint leaves, optional For added freshness
  • 2 cups crushed ice cubes

Method
 

Preparation
  1. Place half of the yogurt, honey, honeydew melon, cucumber, and mint (if using) in a blender.
  2. Cover the blender and process until well blended.
  3. Add 1 cup of ice and cover again. Process until smooth.
  4. Pour the smoothie into three glasses.
  5. Repeat the process with the remaining ingredients.

Notes

Serve in tall glasses, garnished with mint or melon pieces. Best enjoyed fresh.
