  • 4 pieces boneless skinless chicken breasts
  • 4 pieces Russet potatoes, cut into 2-inch pieces
  • 2 cups baby carrots
  • 1 packet dry ranch dressing mix
  • 10 oz can cream of chicken soup
  • 1 cup milk

Preparation
  1. In a small mixing bowl, whisk together the cream of chicken soup, milk, and ranch dressing mix.
  2. Place the chicken, carrots, and potatoes in the slow cooker.
  3. Pour the sauce over the ingredients in the crock pot.
Cooking
  1. Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours.
  2. If desired, shred the chicken and place it back into the crock pot after cooking. If the sauce separates, whisk it together and add the chicken and vegetables back.

Notes

Serve warm straight from the crock pot, optionally with fresh herbs on top for extra flavor. Leftovers can be stored in an airtight container for up to 3-4 days in the fridge or frozen for longer storage. For variations, consider different vegetables or using low-fat ingredients.
