  • 1 lb ground beef, browned and drained Use lean ground beef for a healthier option.
  • 3-4 medium potatoes, peeled and diced Russet or Yukon Gold potatoes work well.
  • 1 can diced tomatoes, undrained Do not drain to keep the soup rich.
  • 1 can tomato sauce

Method
 

Preparation
  1. In a skillet, brown the ground beef over medium heat and drain any excess fat.
  2. Add the browned beef to the crockpot.
  3. Add the diced potatoes, diced tomatoes (with juice), and tomato sauce to the crockpot.
  4. Stir to combine all ingredients well.
Cooking
  1. Cover and cook on low for 6-8 hours or on high for 3-4 hours until the potatoes are tender.
  2. Serve hot.

Notes

For added flavor, consider incorporating chopped onions, bell peppers, garlic powder, or spices. Top bowls with shredded cheese, green onions, or sour cream. Leftovers can be stored in the refrigerator for up to 3-4 days or frozen for up to 3 months.
