Preparation
- Heat olive oil in a skillet over medium heat. Sear the beef chuck roast on all sides until browned.
- Place the seared roast in a crockpot. Add chopped onion, beef broth, garlic powder, Worcestershire sauce, salt, and pepper.
Cooking
- Cover and cook on low for 6-8 hours or until the beef is tender.
- Remove the beef and shred it, then return it to the crockpot.
- Stir in the egg noodles and cook on high for an additional 30 minutes, or until the noodles are cooked through.
Serving
- Serve hot, garnished with chopped parsley if desired.
Notes
For extra flavor, consider adding some diced carrots or celery to the crockpot along with the onions. If you prefer thicker gravy, mix a tablespoon of cornstarch with a little bit of cold water and stir it into the pot towards the end of cooking. Adjust the seasoning to your taste.
