Ingredients
  

For the Chicken
  • 1 kg chicken (drumsticks or thighs)
  • 2 cups buttermilk (or milk + 1 tbsp vinegar) Buttermilk adds flavor and tenderness.
  • 1 cup all-purpose flour
  • 1 piece egg
For Seasoning
  • 1 tbsp garlic powder
  • 1 tbsp paprika
  • 1 tsp black pepper
  • 1 tsp salt
  • 1 tsp onion powder
  • 1/2 tsp cayenne pepper (optional) For extra heat.
For Frying
  • Oil for frying Use enough oil to submerge the chicken.

Method
 

Marination
  1. In a bowl, mix the buttermilk and egg together.
  2. Add the chicken to the bowl and let it marinate for at least 1 hour. For best results, let it sit overnight.
Coating
  1. In another bowl, combine the flour with all the spices: garlic powder, paprika, black pepper, salt, onion powder, and cayenne pepper (if using).
  2. Take the chicken out of the marinade and coat it well in the seasoned flour. Press down to create that crispy texture.
Frying
  1. Heat oil in a pan over medium heat.
  2. Carefully place the chicken into the hot oil.
  3. Fry for about 12–15 minutes, turning occasionally, until golden brown and fully cooked.
  4. Remove the chicken and place it on paper towels to drain the excess oil.

Notes

Serve with sides like coleslaw, mashed potatoes, or biscuits. Add hot sauce or your favorite dipping sauce for extra flavor.
