Ingredients
  

For the dredging mixture
  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
For the chicken
  • 8 pieces chicken drumsticks
  • 1 large egg
  • 1/2 cup buttermilk
  • 4 cups cooking oil for frying

Preparation
  1. In a bowl, combine flour, cornstarch, salt, pepper, garlic powder, onion powder, and paprika.
  2. In another bowl, whisk together egg and buttermilk.
Coating
  1. Dip each drumstick in the egg mixture, then dredge in the flour mixture to coat.
Frying
  1. Heat oil in a deep pan over medium heat.
  2. Fry the drumsticks in batches until golden and crispy, about 10-12 minutes.
  3. Remove and drain on paper towels.

Notes

Make sure the oil is hot enough before frying. Test by dropping in a small piece of bread; if it sizzles, the oil is ready. Don’t overcrowd the pan when frying to maintain oil temperature and ensure every drumstick gets crispy. Let the chicken rest on paper towels after frying to absorb excess oil and keep the skin crispy. Store leftovers in an airtight container in the refrigerator for 3-4 days and reheat in the oven for the best texture.
