- In a saucepan, combine the cornstarch and water to create a slurry.
- Add the coconut milk, evaporated milk, sugar, and salt to the saucepan.
- Cook over medium heat, stirring continuously until the mixture thickens.
- Pour the mixture into a mold or serving dish and smooth the top.
- Let it cool at room temperature and then refrigerate until set.
- Once set, optionally top with toasted coconut before serving.
Notes
Store in an airtight container in the refrigerator for about 4 to 5 days. Ensure it is completely cooled before covering to prevent condensation.
