  • 1 can coconut milk
  • 1 can evaporated milk
  • 1 cup sugar Adjust according to taste.
  • 1/2 cup water Used to create a slurry with cornstarch.
  • 1/2 teaspoon salt

Method
 

Preparation
  1. In a saucepan, combine the cornstarch and water to create a slurry.
  2. Add the coconut milk, evaporated milk, sugar, and salt to the saucepan.
  3. Cook over medium heat, stirring continuously until the mixture thickens.
  4. Pour the mixture into a mold or serving dish and smooth the top.
  5. Let it cool at room temperature and then refrigerate until set.
  6. Once set, optionally top with toasted coconut before serving.

Notes

Store in an airtight container in the refrigerator for about 4 to 5 days. Ensure it is completely cooled before covering to prevent condensation.
