  • 3 cloves Garlic, minced
  • 1 cup Cherry tomatoes, halved
  • 2 cups Fresh spinach
  • 1 cup Cream or milk Can be substituted for low-fat or dairy-free alternatives
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 2 tablespoons Oil For cooking

Method
 

Cooking Chicken
  1. Sprinkle salt and pepper on the chicken breasts and cook them in a pan with oil until golden brown. Once done, remove them from the pan.
Making the Sauce
  1. In the same pan, sauté minced garlic and a handful of cherry tomatoes until they start to soften.
  2. Pour in the cooking cream or milk and let it simmer for 3-4 minutes.
Final Cooking Steps
  1. Add the spinach to the pan and return the cooked chicken.
  2. Cook everything together for an additional 5 minutes until the sauce thickens, then serve with rice or pasta.

Notes

Serve hot, garnished with fresh herbs if desired. Pairs well with rice or pasta, and a glass of white wine enhances the experience. Leftovers can be refrigerated for up to 3 days.
