Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the cooked chicken, spinach, cream cheese, sour cream, mozzarella cheese, Parmesan cheese, garlic powder, onion powder, salt, and pepper. Mix until well combined.
- Transfer the mixture to a greased casserole dish.
- If using, sprinkle breadcrumbs on top for a crunchy topping.
Baking
- Bake in the preheated oven for 25-30 minutes, or until the casserole is hot and bubbly.
- Let it cool slightly before serving.
Notes
Serve hot, paired with salads, roasted vegetables, crusty bread, or tortilla chips. Can be made a day in advance and stored in the fridge before baking. For a vegetarian option, replace chicken with cooked quinoa or lentils.
