  • 2 cups cooked chicken, shredded
  • 1 cup frozen spinach, thawed and drained Make sure to drain well to avoid excessive moisture.
  • 1 cup cream cheese, softened
  • 1 cup sour cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs (optional) For crunchy topping.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the cooked chicken, spinach, cream cheese, sour cream, mozzarella cheese, Parmesan cheese, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  3. Transfer the mixture to a greased casserole dish.
  4. If using, sprinkle breadcrumbs on top for a crunchy topping.
Baking
  1. Bake in the preheated oven for 25-30 minutes, or until the casserole is hot and bubbly.
  2. Let it cool slightly before serving.

Notes

Serve hot, paired with salads, roasted vegetables, crusty bread, or tortilla chips. Can be made a day in advance and stored in the fridge before baking. For a vegetarian option, replace chicken with cooked quinoa or lentils.
