  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups potatoes, peeled and diced
  • 1 cup shredded carrots
  • 1 cup frozen corn
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese

Method
 

Cooking the Soup
  1. In a slow cooker, add the ground beef, diced onion, and minced garlic. Cook on high for 3-4 hours or low for 6-8 hours.
  2. Add the beef broth, potatoes, carrots, and corn to the slow cooker. Stir to combine.
  3. Cook on low for 7 hours or high for 4 hours, until the vegetables are tender.
  4. Stir in the heavy cream and cheddar cheese until melted. Season with salt and pepper to taste.
Serving the Soup
  1. Serve the soup hot in bowls. Optionally, top each bowl with additional shredded cheese, croutons, or fresh herbs.

Notes

For variations, try adding more vegetables like bell peppers or green beans. You can also use turkey instead of ground beef for a lighter option. This soup can be made vegetarian by using veggie broth and plant-based crumbles.
