Ingredients
  

Pasta and vegetables
  • 8 oz Pasta (e.g., rotini or penne) Use a shape that holds dressing well.
  • 1 cup Cherry tomatoes Halved.
  • 1 cup Cucumber Diced.
  • 1 cup Bell pepper Diced.
  • 1/2 cup Red onion Finely chopped.
Dressing
  • 1 cup Mayonnaise Can substitute with Greek yogurt for a lighter option.
  • to taste Salt
  • to taste Pepper
  • to taste Dill (optional)
  • 1/2 cup Olives (optional) Add if desired.

Method
 

Preparation
  1. Cook the pasta according to package instructions. Drain and rinse under cold water to cool.
  2. In a large bowl, combine the cooked pasta with chopped cherry tomatoes, diced cucumber, diced bell pepper, and finely chopped red onion.
  3. In a separate bowl, mix the mayonnaise with salt, pepper, and dill (if using) to taste.
  4. Pour the mayo mixture over the pasta and veggies, stirring until everything is well coated.
  5. Add olives if desired and mix again.
  6. Chill in the refrigerator for at least 30 minutes before serving.

Notes
