Ingredients
  

For the Chicken
  • 2 large chicken breasts, cut into bite-sized chunks
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1/2 tsp chili powder
  • Salt & black pepper
  • 2 tbsp butter
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 tbsp tomato paste
  • 150 ml heavy cream
  • 100 ml chicken broth
  • 1 tsp smoked paprika
  • 1/2 tsp dried oregano
  • 1 tbsp chopped parsley
For the Fries
  • 4 large potatoes, cut into fries
  • 3 tbsp vegetable oil
  • Salt

Method
 

Preparation
  1. Preheat oven to 220°C (425°F). Toss fries with oil and salt, spread on a tray, and bake for 30-35 minutes until golden and crispy, flipping halfway.
  2. Toss chicken pieces with olive oil, paprika, garlic powder, chili powder, salt, and pepper.
Cooking
  1. Heat a pan over medium-high and sear chicken for 6-8 minutes until browned and cooked through (75°C / 165°F). Remove and set aside.
  2. In the same pan, melt butter and sauté onion and garlic until soft.
  3. Stir in tomato paste and smoked paprika, and cook for a minute or two.
  4. Add chicken broth and cream. Simmer for 5-7 minutes until thickened.
  5. Return chicken to the pan and coat well in the creamy sauce.
Serving
  1. Plate creamy chicken with crispy fries and sprinkle with parsley.

Notes

Add a splash of white wine for extra depth. Use smoked paprika for a richer, slightly smoky flavor.
