Ingredients

  • 8 ounces pasta of your choice Use any pasta like penne or fettuccine.
  • 1 cup heavy cream Ensure cream is at room temperature to avoid curdling.
  • 1 cup grated Parmesan cheese Can add extra for serving.
Vegetables and Seasoning
  • 2 tablespoons olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced Any variety like cremini or shiitake can be used.
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Method

Cooking Pasta
  1. Cook the pasta according to the package instructions. Drain and set aside.
Making the Sauce
  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic, cooking until the onion is translucent (about 3-4 minutes).
  3. Add the sliced mushrooms to the skillet and cook until they are tender and browned (about 5-7 minutes).
  4. Pour in the heavy cream and bring it to a simmer. Stir in the grated Parmesan cheese until melted and smooth.
  5. Season with salt and pepper to taste.
Combining
  1. Add the cooked pasta to the skillet and toss until well coated with the creamy sauce.
  2. Serve hot, garnished with chopped parsley.

Notes

If you have leftovers, store them in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or on the stovetop, adding a splash of water or cream to loosen up the sauce. Consider adding fresh herbs or a pinch of red pepper flakes for an extra flavor boost. Avoid freezing the dish as the cream may separate when thawed, but the sauce can be frozen separately.
