  • 1 cup shredded mozzarella cheese Melts into the sauce.

Method
 

Step 1: Cook the Pasta
  1. Cook the penne pasta according to package instructions. Reserve some pasta water, then drain and set aside.
Step 2: Cook the Shrimp
  1. Heat olive oil in a large skillet over medium-high heat. Add shrimp and minced garlic, cooking until the shrimp turn pink and slightly golden. Remove and set aside.
Step 3: Prepare the Sauce Base
  1. In the same skillet, add sun-dried tomatoes and additional garlic. Sauté briefly until fragrant.
Step 4: Make the Creamy Sauce
  1. Pour in the half and half and bring to a gentle boil. Add shredded mozzarella cheese and stir until melted and smooth.
Step 5: Add Seasoning
  1. Stir in basil, red pepper flakes, paprika, and salt. Adjust seasoning to taste.
Step 6: Combine Everything
  1. Return the shrimp to the skillet and add the cooked pasta. Mix well, adding a bit of reserved pasta water if needed to adjust the consistency.

Notes

Avoid overcooking the shrimp to keep them tender. Adding pasta water helps create a smoother sauce that coats the pasta evenly. Perfect for weeknight dinners or special occasions.
