Method

  2. Allow it to warm through and slightly roast to enhance its natural sweetness.
Preparing the Sauce
  1. In a mixing bowl, combine mayonnaise, sour cream, lime juice, chili powder, smoked paprika, salt, and pepper.
  2. Mix until smooth and creamy.
Combining Ingredients
  1. Add the warm corn to the sauce and stir until every kernel is evenly coated.
Assembling the Cups
  1. Spoon the mixture into serving cups.
  2. Top with crumbled cheese, chopped cilantro, and an extra sprinkle of chili powder.
