  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/2 cup crumbled cotija or feta cheese Cotija cheese is traditional, but feta works as a substitute.
Spices and Seasoning
  • 1 tsp chili powder Adjust to taste.
  • 1/2 tsp smoked paprika For a smokier flavor.
  • 1 Juice of lime Fresh lime juice is recommended.
  • 2 tbsp chopped cilantro For garnish.
  • Salt and black pepper To taste.

Preparation
  1. Heat the corn in a skillet over medium heat for about 5-7 minutes until warm and slightly roasted.
  2. In a separate bowl, whisk together mayonnaise, sour cream, lime juice, chili powder, smoked paprika, salt, and pepper until smooth and creamy.
  3. Add the warm corn into the sauce and mix until every kernel is fully coated.
  4. Spoon the mixture into serving cups and top with crumbled cheese, chopped cilantro, and an extra sprinkle of chili powder.
  5. Serve warm with a lime wedge for an extra burst of freshness.

Notes

For best results, lightly char the corn, use fresh lime juice, and adjust the spice level to your preference. You can also add hot sauce or garlic powder for extra flavor.
