Preparation
- Preheat the oven to 400°F (200°C).
- In a pot, cook pasta according to package instructions and set aside.
Cooking
- In a skillet, heat olive oil over medium heat. Add diced potatoes and season with salt and pepper. Cook until crispy and golden.
- In the same skillet, add chicken breasts and cook until golden brown on both sides. Remove chicken and set aside.
- In the skillet, add minced garlic and sauté until fragrant. Pour in heavy cream and chicken broth, then add herbs. Bring to a simmer.
- Return chicken to the skillet and reduce heat, allowing it to cook through.
- Once the chicken is cooked, serve over pasta and top with crispy potatoes.
Notes
Serve directly from the skillet or plate individually. Garnish with extra herbs for color. Store leftovers in an airtight container in the refrigerator for up to three days.
