  • 2 pieces chicken breasts Use boneless, skinless for best results.
  • 1 cup pasta Any type of pasta will work, such as penne or fusilli.
  • 4 cloves garlic, minced Feel free to adjust the amount based on preference.
  • 1 cup heavy cream For a dairy-free version, substitute with coconut milk.
  • 1 cup chicken broth Low sodium is preferable.
  • 1 tablespoon fresh herbs Such as thyme or parsley; can be varied.
  • 2 medium potatoes, diced For crispy texture, cut into small pieces.
  • 2 tablespoons olive oil For cooking potatoes.
  • to taste none Salt and pepper Adjust based on preference.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a pot, cook pasta according to package instructions and set aside.
Cooking
  1. In a skillet, heat olive oil over medium heat. Add diced potatoes and season with salt and pepper. Cook until crispy and golden.
  2. In the same skillet, add chicken breasts and cook until golden brown on both sides. Remove chicken and set aside.
  3. In the skillet, add minced garlic and sauté until fragrant. Pour in heavy cream and chicken broth, then add herbs. Bring to a simmer.
  4. Return chicken to the skillet and reduce heat, allowing it to cook through.
  5. Once the chicken is cooked, serve over pasta and top with crispy potatoes.

Notes

Serve directly from the skillet or plate individually. Garnish with extra herbs for color. Store leftovers in an airtight container in the refrigerator for up to three days.
