  • 3 cups cooked shredded chicken You can use rotisserie chicken for added flavor.
  • 1 cup green grapes, sliced in half
  • 1/2 cup dried cranberries
  • 1/2 cup chopped pecans
Dressing
  • 1/2 cup mayonnaise Can substitute with Greek yogurt for a healthier option.
  • 1 tablespoon lemon juice
  • to taste Salt and pepper

Method
 

Preparation
  1. In a large bowl, combine the cooked shredded chicken, sliced green grapes, dried cranberries, and chopped pecans.
  2. In a separate bowl, mix together the mayonnaise, lemon juice, salt, and pepper.
  3. Pour the mayonnaise mixture over the chicken mixture and stir until well combined.
  4. Serve chilled.

Notes

This salad can be served on its own, in a sandwich, wrapped in a tortilla, or on a bed of greens. Pair it with crackers or fresh bread. To store, keep in an airtight container in the refrigerator for 3 to 4 days.
