- Preheat your oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat. Add the mushrooms and cook until soft.
- Stir in the garlic and cook for about one minute.
- Add the spinach and cook until wilted, then remove from heat.
- In a mixing bowl, combine the cottage cheese, Greek yogurt, onion powder, salt, and pepper. Mix until smooth and creamy.
- Fold in the cooked chicken and the mushroom-spinach mixture until evenly combined.
- Transfer everything into a greased baking dish and spread evenly.
- Top with shredded mozzarella and grated parmesan cheese.
- Bake for 20–25 minutes until the casserole is hot, bubbly, and lightly golden on top.
- Let it rest for a few minutes before serving.

Don’t overbake to keep it creamy. Add herbs like parsley for extra freshness.
