  • 2 cups cooked chicken (shredded or diced) Use rotisserie chicken for convenience.
  • 1 cup cottage cheese Drain excess liquid if needed.
  • 1/2 cup Greek yogurt
  • 1 cup mushrooms, sliced
  • 2 cups fresh spinach Cook until wilted.
  • 1/2 cup shredded mozzarella cheese Swap for lighter cheese if desired.
  • 1/4 cup grated parmesan cheese
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1/2 tsp onion powder
  • Salt and pepper to taste

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat. Add the mushrooms and cook until soft.
  3. Stir in the garlic and cook for about one minute.
  4. Add the spinach and cook until wilted, then remove from heat.
  5. In a mixing bowl, combine the cottage cheese, Greek yogurt, onion powder, salt, and pepper. Mix until smooth and creamy.
  6. Fold in the cooked chicken and the mushroom-spinach mixture until evenly combined.
  7. Transfer everything into a greased baking dish and spread evenly.
  8. Top with shredded mozzarella and grated parmesan cheese.
  9. Bake for 20–25 minutes until the casserole is hot, bubbly, and lightly golden on top.
  10. Let it rest for a few minutes before serving.

Notes

Don’t overbake to keep it creamy. Add herbs like parsley for extra freshness.
