- Place the chicken breasts in the bottom of a slow cooker.
- Add the corn, black beans, Rotel, taco seasoning, ranch seasoning, and chicken broth.
- Place the block of cream cheese on top of the ingredients.
Cooking
- Cover and cook on Low for 6–8 hours, or High for 3–4 hours.
- Remove the chicken and shred it using two forks.
- Return the shredded chicken to the slow cooker and stir until the cream cheese is fully melted and incorporated.
- Stir in 1 cup of shredded cheese until melted.
- Taste and adjust seasoning if needed.

- Serve hot with your favorite toppings such as shredded cheese, sour cream, tortilla strips, avocado, or cilantro.
Notes
To store leftover soup, let it cool completely, then transfer it to an airtight container. It can be kept in the refrigerator for 3-4 days. If you want to store it for longer, you can freeze it for up to 3 months. Just be sure to thaw it in the refrigerator before reheating. For a spicier kick, consider adding diced jalapeños to the slow cooker. Feel free to customize the toppings to your liking — fresh cilantro and avocado work great! If you don’t have a slow cooker, you can make this soup on the stove. Just simmer everything in a pot until the chicken is cooked through and the flavors meld together.
