Ingredients
  

Pasta and Chicken
  • 1 lb penne pasta
  • 2 pieces chicken breasts, diced
Vegetables
  • 1 cup peas
  • 1 cup carrots, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
Sauce Ingredients
  • 2 cups chicken broth
  • 2 cups milk
  • 1/2 cup all-purpose flour
  • 1 cup shredded cheddar cheese
Seasonings
  • 1 tsp thyme
  • 1 tsp parsley
  • Salt and pepper to taste
Additional
  • 1 tbsp olive oil or butter

Method
 

Preparation
  1. Cook the pasta in salted water according to package instructions. Drain and set aside.
  2. In a large skillet, heat oil or butter and cook the diced chicken until fully cooked.
  3. Add onion, garlic, peas, and carrots to the skillet, cooking until tender.
Sauce
  1. In a separate pot, whisk together chicken broth, milk, and flour until smooth.
  2. Add seasonings and cook until the sauce thickens.
Combine and Serve
  1. Add the cooked pasta and chicken mixture into the sauce, stirring until evenly coated.
  2. Stir in shredded cheddar cheese until melted and creamy.
  3. Serve hot and garnish with parsley.

Notes

Whisk continuously to avoid lumps in the sauce. Don’t overcook pasta before combining. Add extra cheese for a richer flavor. Adjust seasoning to taste.
