Ingredients

Main Ingredients
  • 1 lb ground beef adds a rich, savory base
  • 1 large yellow onion, chopped enhances flavor
  • 1 cup shredded carrots adds sweetness and color
  • 4 large russet potatoes, diced soft and hearty texture
  • 3 cups chicken broth creates the soup base
  • 1/4 cup butter for richness
  • 1/4 cup flour thickens the soup
  • 2 cups whole milk makes it creamy and smooth
  • 8 oz sharp cheddar cheese, shredded for bold cheesy flavor

Method

Cooking the Beef
  1. In a large pot, cook the ground beef and chopped onion over medium heat until the meat is fully browned. Drain excess grease.
Adding Vegetables and Broth
  1. Add the diced potatoes, shredded carrots, and chicken broth to the pot. Let everything simmer until the vegetables are tender.
Making the Cream Base
  1. In a separate pan, melt the butter and whisk in the flour until it forms a smooth paste.
Adding Milk
  1. Slowly pour in the milk while stirring continuously until the mixture thickens into a creamy sauce.
Combining Everything
  1. Pour the creamy mixture into the soup pot and stir well.
Adding Cheese
  1. Remove the pot from heat and stir in the shredded cheddar cheese until fully melted and smooth.

Notes

Cutting the potatoes into smaller pieces helps them blend better with the thick cheese base and ensures every spoonful is evenly balanced.
