  • 1/2 cup diced onion Cook until translucent.
  • 1 can refried beans
  • 1 cup sour cream Combine with salsa for extra flavor.
  • 1/2 cup salsa You can add jalapeños or hot sauce for spice.
  • 1 tablespoon taco seasoning
  • 4 large flour tortillas Swap for corn tortillas for gluten-free option.
  • 1 cup shredded cheese Experiment with different types like pepper jack.
  • Oil for cooking Use for sautéing the onion.

Method
 

Preparation
  1. In a skillet, heat oil over medium heat. Add diced onion and cook until translucent.
  2. Add ground beef and taco seasoning, cooking until the beef is browned.
  3. Stir in refried beans and mix well until heated through.
Assembly
  1. In a bowl, combine sour cream and salsa.
  2. On each tortilla, spread a layer of the beef mixture and top with cheese.
  3. Roll the tortillas tightly and place in a baking dish.
  4. Pour the remaining sour cream mixture over the burritos, and sprinkle extra cheese on top.
Cooking
  1. Bake at 350°F (175°C) for 20-25 minutes or until cheese is melted and bubbly.

Notes

Serve hot from the oven with additional salsa, chopped green onions, or sour cream on the side. Pairs well with salad or seasoned rice. Refrigerate leftovers for up to 3 days, reheat at 350°F (175°C) for 10-15 minutes.
