  • 1 tbsp olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups cooked lasagna noodles, broken
  • 1 cup spinach, chopped
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup parmesan cheese, grated
  • to taste Salt and pepper
  • to taste Italian seasoning

Method
 

Preparation
  1. In a large pot, heat olive oil over medium heat. Add diced onion and garlic; sauté until soft.
  2. Pour in chicken broth and bring to a simmer.
  3. Stir in heavy cream, followed by the broken lasagna noodles.
  4. Add chopped spinach and cook until wilted.
  5. Stir in ricotta cheese, mozzarella, and parmesan until melted and combined.
  6. Season with salt, pepper, and Italian seasoning.
  7. Serve hot, garnished with additional cheese if desired.

Notes

Use fresh ingredients for more flavor. Adjust the soup's thickness by adding more chicken broth or cream. Taste and adjust seasonings as necessary. Store leftovers in an airtight container, or freeze for later use.
