Dry ingredients
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon salt
Wet ingredients
  • 1/2 cup cream cheese, softened Make sure it's softened for easy mixing.
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 cup fresh strawberries, chopped Fresh strawberries provide the best flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In another bowl, cream together the softened cream cheese, granulated sugar, and brown sugar until smooth.
  4. Add the vanilla extract and egg, mixing until well combined.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Fold in the chopped strawberries.
  7. Drop tablespoon-sized portions of dough onto a lined baking sheet.
Baking
  1. Bake for 12-15 minutes or until the edges are lightly golden.
  2. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

These cookies are best enjoyed fresh. They can be served with whipped cream or a scoop of vanilla ice cream. For storage, keep them in an airtight container at room temperature for up to a week or freeze them with parchment paper in between layers.
