  • 4 pieces boneless skinless chicken breasts
  • 1 cup broccoli florets, steamed and chopped
  • 8 oz cream cheese, softened Make sure it's softened for easy mixing.
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and black pepper to taste
  • 1 tbsp olive oil

Method
 

Preparation
  1. Preheat your oven to 375°F and lightly grease an oven-safe skillet or baking dish.
  2. Slice a pocket into the side of each chicken breast without cutting all the way through.
  3. In a bowl, mix the chopped broccoli, cream cheese, cheddar cheese, Parmesan cheese, garlic powder, onion powder, salt, and pepper until well combined.
  4. Fill each chicken breast pocket with the creamy broccoli mixture and secure with toothpicks if needed.
Cooking
  1. Heat the olive oil in a skillet over medium-high heat and sear the chicken until golden on both sides.
  2. Transfer the skillet to the oven and bake until the chicken is fully cooked.
  3. Let the chicken rest briefly before serving.

Notes

Serve with jasmine rice or mashed potatoes, and accessorize with a fresh salad. Drizzle olive oil or lemon juice for added flavor. Store leftovers in an airtight container; lasts 3-4 days in the fridge or can be frozen.
