  • 1 whole beef tenderloin, approximately 2 lbs Use high-quality beef for the best flavor and tenderness.
  • 1 cup lump crab meat Picked over for shells.
  • 1/4 cup breadcrumbs
  • to taste Salt and pepper
  • for searing Cooking oil or butter
  • 1/2 cup Béarnaise sauce Store-bought or homemade.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, combine the crab meat and breadcrumbs, and season with salt and pepper.
  3. Cut a pocket into the beef tenderloin for stuffing.
  4. Fill the pocket with the crab mixture.
Cooking
  1. Heat oil or butter in a skillet over medium-high heat and sear the stuffed tenderloin on all sides until browned.
  2. Transfer the tenderloin to a baking dish and bake in the preheated oven for 25-30 minutes or until it reaches desired doneness.
  3. Remove from oven, let rest for 10 minutes, and slice.
  4. Serve with Béarnaise sauce on top.

Notes

Serve with a side of roasted vegetables, mashed potatoes, or a simple salad. Sautéed greens or a nice red wine can complement the flavors beautifully. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently before serving.
