  • 1 lb ground beef, browned and drained Use lean ground beef for a healthier option.
  • 3-4 medium potatoes, peeled and diced Adjust number of potatoes based on size.
  • 1 can diced tomatoes, undrained Any brand will do.
  • 1 can tomato sauce
  • 1 can corn, drained Use sweet corn for better flavor.
  • 1 can green beans, drained Can substitute with fresh green beans.
  • 1 can mixed vegetables, drained You can use a frozen mixed vegetable blend.
  • 2 cups beef broth Use low-sodium broth if preferred.

Preparation
  1. In a large pot, cook the ground beef over medium heat until browned. Drain excess fat.
  2. Add potatoes, diced tomatoes, tomato sauce, corn, green beans, mixed vegetables, and beef broth to the pot.
  3. Stir well to combine the ingredients.
  4. Bring to a boil, then reduce heat to low and let simmer for about 30–40 minutes, or until potatoes are tender.
  5. Serve hot.

Notes

Serve with crusty bread or crackers. A sprinkle of shredded cheese on top can enhance the flavor. Soup makes great leftovers and can be stored in airtight containers.
