  • 1 lb ground beef Use lean ground beef for a healthier option.
  • 1 medium onion, chopped Chop finely for even distribution.
  • 2 cloves garlic, minced Add more for extra flavor if desired.
  • 4 medium potatoes, thinly sliced Russet or Yukon gold work well.
  • 1 can corn, drained (15 oz) Use fresh or frozen corn as an alternative.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, brown the ground beef with the chopped onion and minced garlic until cooked through.
  3. Layer the thinly sliced potatoes in a greased casserole dish.
  4. Add the cooked beef mixture over the potatoes.
  5. Spread the drained corn on top.
Baking
  1. Cover with aluminum foil and bake for 60 minutes.
  2. Remove the foil and bake for an additional 15 minutes until the potatoes are tender and the top is slightly golden.

Notes

Serve hot with a side salad or crusty bread. Leftovers can be reheated in the oven or microwave. For added flavor, season the beef as desired and consider adding cheese before the final bake.
