  • 1/2 cup black beans, rinsed and drained
  • 1/4 cup red onion, diced
  • 1 tablespoon lime juice
  • 1 teaspoon cumin

Method
 

Preparation
  1. In a large bowl, combine the shredded chicken, cottage cheese, cherry tomatoes, corn, black beans, bell pepper, and red onion.
  2. In a separate small bowl, mix together lime juice, cumin, salt, and pepper.
  3. Pour the dressing over the chicken mixture and toss to combine.
  4. Serve chilled, garnished with fresh cilantro.

Notes
