Preparation and Baking
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine cottage cheese, mashed banana, and egg. Mix well.
- Stir in oats, chocolate chips, vanilla extract, baking powder, and salt until fully combined.
- Drop spoonfuls of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 12-15 minutes or until the cookies are set and lightly golden.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely. Enjoy your cookies!
Notes
Store cookies in an airtight container at room temperature for up to 3 days. They can also be frozen for up to 3 months, separated with parchment paper.
