  • 1 cup cottage cheese
  • 1 ripe banana, mashed Use a very ripe banana for a sweeter taste.
  • 1 1/4 cups oats Can substitute for almond flour for a gluten-free version.
  • 1 egg Can be replaced with flaxseed meal mixed with water or applesauce for a vegan option.
  • 1/2 cup chocolate chips Feel free to use different types of chocolate like dark or white chocolate.
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • Pinch of salt

Method
 

Preparation and Baking
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine cottage cheese, mashed banana, and egg. Mix well.
  3. Stir in oats, chocolate chips, vanilla extract, baking powder, and salt until fully combined.
  4. Drop spoonfuls of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
  5. Bake for 12-15 minutes or until the cookies are set and lightly golden.
  6. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely. Enjoy your cookies!

Notes

Store cookies in an airtight container at room temperature for up to 3 days. They can also be frozen for up to 3 months, separated with parchment paper.
