  • 1/2 cup chocolate chips Consider using dark chocolate for a healthier option.
  • 1/4 cup honey or maple syrup Optional for sweetness; adjust to taste.
  • 1/2 teaspoon vanilla extract Enhances the flavor.
  • 1/2 teaspoon baking powder Helps the cookies rise.
  • 1/4 teaspoon salt

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix together the cottage cheese, mashed banana, and egg until well combined.
  3. Stir in the oats, chocolate chips, honey (if using), vanilla extract, baking powder, and salt until everything is well incorporated.
  4. Drop spoonfuls of the batter onto the prepared baking sheet, spacing them about 2 inches apart.
  5. Bake for 12-15 minutes, or until the edges are lightly golden.
  6. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

These cookies are great as is, but you can serve them with yogurt or honey for extra flavor. They can be stored in an airtight container for up to three days at room temperature, up to a week in the refrigerator, or frozen for up to three months.
