Preparation
- Heat a skillet over medium heat and cook the ground beef until fully browned. Drain any excess grease.
- Stir in the taco seasoning and Rotel tomatoes into the cooked beef until well combined.
- Lightly crush the Doritos and place a layer at the bottom of the crock-pot.
- Add a layer of the seasoned beef mixture over the chips. Sprinkle with shredded cheese and drizzle with Catalina dressing.
- Repeat the layering with another layer of crushed Doritos, followed by the beef mixture, cheese, and dressing.
- Cover and cook on LOW for 3–4 hours or HIGH for about 2 hours.
- Serve warm, topped with chopped lettuce and diced tomatoes if desired.
Notes
For extra texture, mix in black beans or corn into the beef mixture before layering. Add a spoonful of sour cream just before serving for a creamy finish.
