Cool Ranch Taco Crock-Pot Casserole

Ingredients
  

Main Ingredients
  • 1 lb ground beef Cooked until fully browned.
  • 1 packet taco seasoning
  • 1 (10 oz) can Rotel tomatoes
  • 1 cup shredded cheese Cheddar or Mexican blend cheese.
  • 1/2 cup Catalina dressing
  • 1 bag Cool Ranch Doritos, crushed Or experiment with other tortilla chips.
Optional Toppings
  • as needed Chopped lettuce For a fresh finishing touch.
  • as needed Diced tomatoes For added freshness.

Method
 

Preparation
  1. Heat a skillet over medium heat and cook the ground beef until fully browned. Drain any excess grease.
  2. Stir in the taco seasoning and Rotel tomatoes into the cooked beef until well combined.
  3. Lightly crush the Doritos and place a layer at the bottom of the crock-pot.
  4. Add a layer of the seasoned beef mixture over the chips. Sprinkle with shredded cheese and drizzle with Catalina dressing.
  5. Repeat the layering with another layer of crushed Doritos, followed by the beef mixture, cheese, and dressing.
  6. Cover and cook on LOW for 3–4 hours or HIGH for about 2 hours.
  7. Serve warm, topped with chopped lettuce and diced tomatoes if desired.

Notes

For extra texture, mix in black beans or corn into the beef mixture before layering. Add a spoonful of sour cream just before serving for a creamy finish.
